The Ankarsrum Assistent Original® is a powerful, versatile stand mixer with a distinctive design that has set it apart since 1940. Unlike traditional stand mixers with the motor in the head, the Assistent Original has its motor in the base, creating a low center of gravity and exceptional countertop stability. The machine base is backed by a 7-year warranty, adding confidence in its quality and durability.
At the heart of the original 1940 design is the Dough Roller, Ankarsrum’s signature tool for kneading, mixing, and even whipping. As the stainless steel bowl rotates, the Dough Roller gently processes ingredients against the side of the bowl, mimicking the motion of hand kneading for bread and other yeast doughs. The adjustable Dough Roller can also be used to mix batters, whip cream and egg whites, and more. For bakers who prefer a different kneading method, the included Dough Hook makes it easy to choose the technique that works best for your recipe.
The motor automatically adjusts its power based on the load, providing consistent performance as you mix and knead, while the unique gear system delivers powerful yet quiet operation. Two control knobs make operation simple: one provides variable speed control, while the other serves as the on/off switch and built-in timer.
The spacious 7-Liter Stainless Steel Bowl can handle up to 5 kg (11 lbs.) of dough, ideal for small and large batches. It can also accommodate recipes with up to 1.5 liters of liquid.

I have owned the Ankarsrum Assistent stand mixer for several months now. It is fantastic at mixing bread dough, especially the 9-cups-of-flour Pullman loaves. The large mixing bowl, the side scraper, and dough roller give bread dough what it needs to achieve the perfect texture. The gentle kneading by the roller allows the dough to reach perfect gluten development. To watch it come together is a sight to behold.
Although there is a learning curve, particularly if you’re coming from using a top-mounted planetary mixer, there are numerous videos online to show how to use the mixer. Ankarsrum U.S.A.’s YouTube page has all the beginner use videos to get anyone started with the mixer. It’s much easier than it initially appears. It’s just a different type of stand mixer, that’s all. Once you use it, you’ll wonder how you ever got along without it.
I love my Ankarsrum and will sing the praises of the company. They have a wonderful mixer that makes my bread baking so much easier and fool=proof. Their customer service is top notch and the mixer comes with a 7-year warranty for the motor. Yes, the Bosch Universal is a good mixer, but in my opinion, it can’t hold a candle to the Ankarsrum. The Ank can do so much more with all the other attachments that come standard. It can be your kitchen mixer for all needs – meringues, cookies, frostings, and anything else a stand mixer is used for.
The Ankarsrum Assistent Stand Mixer is expensive and it is worth EVERY penny, IMO. It is the best money I’ve spent on a kitchen appliance. I bake bread often and I would be lost without it. A wonderful hardback recipe book comes standard with the mixer. It is an extra plus that makes the purchase even better. If you’re on the fence (and concerned about the cost), see it as an investment. It will pay for itself once you see how it brings your bread to life. I recommend it highly and will continue to sing its praises
