DIGITAL SCALE: A digital scale is the secret to perfect baking, and it will make your life much easier. Measuring by weight is more accurate, and you can measure right in the bowl you’re mixing in, which means fewer dishes to clean.

 

 
INSTANT-READ DIGITAL THERMOMETER: A digital thermometer is terrific for checking the internal temperature of all manner of bakes, as well as liquids in doughs and batters and for frostings and glazes.

 

 
CANDY/DEEP FRY THERMOMETERCANDY/DEEP FRY THERMOMETER: Candy, or deep-fry, thermometers are sturdy, classic glass models or probe-style thermometers that clip to the side of your pot to precisely monitor temperatures. Just remember to keep the thermometer from touching the bottom of your pot or skillet, which will give you an inaccurate reading.

Wait until it confirms that the oven has reached the correct temperature, and don’t worry if it fluctuates slightly—that’s normal! But if your oven consistently reads hotter or cooler than what you set it to, don’t fret, because you can easily calibrate it according to the appliance’s instruction manual.

The probe thermometer is a golden asset when roasting meats, and in our test kitchen, we often use probe thermometers as candy/deep-fry thermometers since they frequently come with clips for attaching to pots or pans.

 

 
SPRING-LOADED SCOOP: A good spring-loaded scoop will guarantee uniformity in size and an even bake across dozens of cookies and muffins. It’s also great for portioning fillings that get swirled into batters. A 1 1⁄2- to 2-tablespoon scoop is the most-used size for cookies, and a 1⁄4-cup size is great for muffins.
