Fresh Strawberry Pie

Slicing through the buttery, flaky double piecrust reveals the beautiful deep pinkish-red hue of this berry-filled dessert.

Fresh Strawberry Pie

Makes 1 (9-inch) deep-dish pie

Ingredients
  

  • 2½ pounds (1,134 grams) halved hulled fresh strawberries or other berries (about 8 cups)
  • ¾ cup (150 grams) plus 2 tablespoons (24 grams) granulated sugar, divided
  • 1 tablespoon (15 grams) fresh lemon juice
  • ½ teaspoon (1.5 grams) kosher salt
  • 7 tablespoons (56 grams) cornstarch
  • Double-Crust Pie Dough (recipe follows)
  • 1 large egg (50 grams)
  • 1 tablespoon water (15 grams)

Instructions

  • In a large bowl, stir together berries, ¾ cup (150 grams) sugar, lemon juice, and salt. Let stand at room temperature for 1 hour, stirring occasionally. Strain berries through a fine-mesh sieve into a liquid-measuring cup, reserving liquid and solids. (You should have about 1 cup or 280 grams berry liquid.)
  • In a medium saucepan, whisk together reserved berry liquid and cornstarch until smooth. Cook over medium heat, whisking constantly, until juice is just beginning to thicken, 4 to 5 minutes. Stir in berries. Cook, stirring frequently, until mixture is thick and translucent, 7 to 9 minutes. Remove from heat, and let cool completely.
  • Preheat oven to 400°F (200°C). Lightly spray a 9-inch deep-dish pie plate with cooking spray.
  • On a lightly floured surface, roll half of Double-Crust Pie Dough into a 13-inch circle (about â…› inch thick). Transfer to prepared plate, pressing into bottom and up sides. Spread cooled berry mixture into prepared crust.
  • On a lightly floured surface, roll remaining Double-Crust Pie Dough to â…›-inch thickness. Place dough on berry mixture. Trim excess dough to ½ inch beyond edge of plate, and press top and bottom crusts together. Fold edges under, and crimp as desired. Freeze for 15 minutes.
  • In a small bowl, whisk together egg and 1 tablespoon (15 grams) water. Using a pastry brush, lightly brush egg wash onto dough. Using a sharp knife, cut slits in top crust to vent. Sprinkle with remaining 2 tablespoons (24 grams) sugar.
  • Bake until crust is golden brown and set, 35 to 40 minutes, covering edges with foil after 20 minutes of baking to prevent excess browning. Let cool completely on a wire rack. Refrigerate in an airtight container for up to 3 days.

Notes

PRO TIP
If you use strawberries, be sure you have 2½ pounds of fruit after hulling and halving, not before. If strawberries are large, quarter them. Smaller berries can be left whole.

Double-Crust Pie Dough

Makes 2 (9-inch) deep-dish crusts

Ingredients
  

  • 3 cups (375 grams) all-purpose flour
  • 2 teaspoons (6 grams) kosher salt
  • 1 cup (227 grams) cold unsalted butter, cubed
  • â…” cup (160 grams) ice water, plus more if needed

Instructions

  • In the work bowl of a food processor, pulse flour and salt until combined. Add cold butter, and pulse until mixture is crumbly and butter pieces are pea-size. With processor running, add â…” cup (160 grams) ice water in a slow, steady stream just until dough comes together. (Mixture may appear crumbly. It should be moist and hold together when pinched.) Add more ice water if needed.
  • Turn out dough onto a work surface, and divide in half. Shape each portion into a disk, and tightly wrap each in plastic wrap. Refrigerate for at least 1 hour or up to 2 days. Let dough stand at room temperature for 10 to 15 minutes before rolling if refrigerating for longer than 1 hour.
