Explore the sweet side of San Miguel de Allende, Mexico, a Colonial-era jewel and UNESCO World Heritage Site in the central highlands of Mexico. We’ll meander through the pedestrian-friendly cobblestone streets, past the towering pink Parroquia San Miguel Arcángel and the bustling Mercado Ignacio Ramírez y de Artesanías, in search of the best conchas, elotes, and more. We’ll have VIP access to bakers and behind-the-scenes glimpses at the artisans who make this cultural hub so unique. Accommodations will be at the Casa de Sierra Nevada, a five-star Belmond hotel property, set amongst 17th- and 18-century buildings in the heart of the Zona Centro.

The Bake from Scratch team will coordinate your private airport pickup from Bajío International Airport (BJX) or Queretaro International Airport (QRO). Once you arrive in San Miguel at Casa de Sierra Nevada, you’ll get settled and relax before an evening wine reception at the hotel so you can meet our team and your fellow bakers. Dinner will be on your own with our list of top restaurants to try while you’re in San Miguel.

Enjoy a leisurely morning and in-room coffee service. Then we’ll break into two small groups of 10 bakers each for the day’s activities. The first group will join local baker Paco Cárdenas, owner of Petit Four café and bakery, for a walking tour of the famed Mercado Ignacio Ramírez y de Artesanías before traveling to Paco’s home just outside the city center to make homemade tortillas and a fabulous lunch. The second group will join Bake from Scratch friend and local Jose De Anda for a historical walking tour and visit to Panadería La Colmena. La Colmena, also known as the blue door bakery, dates back to 1898, which makes it one of the oldest bakeries in Mexico. We’ll get an exclusive tour of the kitchen before a tasting you won’t soon forget! Next, you’ll head back to Casa de Sierra Nevada for an afternoon baking class with their pastry chef, where you’ll learn how to make a brilliant Tres Leches Parroquia and churros. After an amazing day, dinner will be on your own with our list of top restaurants to try while you’re in San Miguel.

Wednesday, April 10, 2024

After a leisurely morning and in-room coffee service, we’ll head to Panio Atelier and step inside their kitchen for a hands-on conchas class. Pastry chef Marc Misseri is a pioneer in the San Miguel baking community and has greatly impacted the area. After we learn how to make conchas, we’ll head to Hortus, a new sister property to Panio, for a private wine and conchas tasting. Enjoy the afternoon and evening on your own. There’s lots of shopping to do!

Enjoy a leisurely morning and in-room coffee service before we head to the chic new Hotel Amatte Community that sits high above San Miguel for a pan de muerto workshop and lunch on their fabulous rooftop. While this bread is seasonal to Día de los Muertos, we couldn’t bake in San Miguel without learning how to make this “bread of the dead.” In the afternoon, you’ll have time for more shopping and exploring before a group farewell dinner at Casa de Sierra Nevada.

Accommodations in San Miguel de Allende

The charming and serene Casa de Sierra Nevada is a five-star Belmond hotel property that’s set amongst 17th- and 18-century buildings in the heart of the Zona Centro. Around every corner, you’ll find spots to tuck away, as well as trickling fountains, courtyards, and lush foliage. Step outside of the hotel, and you’ll be in the midst of the bustling city center. The following amenities are included in your stay: in-room wake-up coffee service, fitness studio access with required reservation, daily turndown service, and bottled water in the room.

Booking

To be confirmed, half of the retreat cost (50%) is due within 48 hours of booking. The second half of the retreat cost (50%) is due October 15, 2023. We accept payment by American Express, Visa, Mastercard, PayPal, and Amazon Pay. Trip prices are in US dollars.

Travel to and from San Miguel de Allende

The Bake from Scratch team will recommend the best flights into nearby airports. Guests are responsible for booking their flights to Bajío International Airport (BJX), which is about 1½ hours away by car near León, or Queretaro International Airport (QRO), which is about an hour away by car. In addition, the Bake from Scratch team will coordinate a private car service to/from these recommended airports and the hotel in San Miguel. Bakers who arrive and depart on the same recommended flights will transit together.

Costs

The price of the trip includes hotel accommodations, all baking classes, all scheduled retreat activities, private car transfers to/from BJX or QRO airports, welcome wine reception, some lunches, and group dinner.

Single-occupancy, double-occupancy, and baking participant plus non-baking guest rates are available.

Your credit card will be charged by Hoffman Media, the parent company of Bake from Scratch.

Cancellation

Since the trip is nonrefundable, we suggest buying trip insurance.

If you don’t purchase travel insurance, you agree to indemnify us against any charges that might otherwise be covered by your insurance. You further agree that we are not responsible for any costs of cancellation or costs related to trip interruptions or illness such as COVID-19. Due to COVID-19, there may be limitations relating to activities. Certain services and amenities may be reduced or unavailable as a result of changing circumstances. Please know that we are working closely with our partners to plan and execute a safe baking retreat for our guests, but there is an inherent risk of exposure to COVID-19 when traveling. By booking this baking retreat, you acknowledge and assume these risks associated with travel.

We reserve the right to cancel this retreat if fewer than 20 participants have signed up by February 15, 2024. We will send an email confirmation to all participants when this number has been met. If Bake from Scratch initiates the cancellation, we will refund all payments.

How many bakers will be on this retreat?

This retreat will be capped at 20 bakers. The group will split into two smaller groups of 10 bakers for some activities.

How do I get to San Miguel?

You can fly into Bajío International Airport (BJX), which is about 1½ hours away by car near León, or Queretaro International Airport (QRO), which is about an hour away by car. Airport transfers for participants are only covered to/from these two airports. If you choose to use another airport, you will be responsible for getting yourself to San Miguel. The Bake from Scratch team will recommend the best flights into BJX and QRO. Bakers who arrive and depart on the same recommended flights will transit together, so you might share a van or car with other participants.

Is breakfast included?

Daily breakfast is not included, but in-room coffee service each morning is included.

Are children able to attend this retreat?

All participants must be 18 years old or older to attend this baking retreat.

What should I plan to wear during baking classes?

Comfortable “resort casual” clothing and closed-toe shoes. Long hair should be pulled back.

Are the baking classes hands-on?

Yes, you will be doing hands-on baking.

Is this retreat better-suited for professionals or home bakers?

Our retreats are geared for passionate home bakers, but professionals are always welcome.

Will we have any free time?

You will have free time to explore, shop, sip, and eat in San Miguel. If you’re interested in other activities such as hot air balloon rides or horseback riding, we can make recommendations.

I want to bring my travel companion, but they don’t want to participate in the baking classes. What can they do?

We offer a baking participant plus non-baking guest package for this very reason! This package allows you to bake and participate in all retreat activities while your travel companion explores San Miguel on their own. As a part of this package, hotel accommodations, private car transfers to/from BJX or QRO airports, the welcome wine reception, and the group dinner are included for your non-baking companion.
