Whipped Cream Cheese Filling

Makes about 6 cups

Ingredients
  

  • 3 ounces (85 grams) cream cheese, softened
  • ¾ cup (150 grams) granulated sugar
  • 2 teaspoons (12 grams) vanilla bean paste
  • 3 cups (720 grams) cold heavy whipping cream

Instructions

  • In the bowl of a stand mixer fitted with the whisk attachment, beat cream cheese, sugar, and vanilla bean paste at medium speed until smooth and combined, 3 to 4 minutes, stopping to scrape whisk and bottom and sides of bowl. With mixer on low speed, slowly add cold cream, beating just until combined. Thoroughly scrape whisk and bottom and sides of bowl. Gradually increase mixer speed to medium-high, and beat until stiff peaks form. Use immediately.
