Roasted Tomato and Marinated Mozzarella Filling

Makes about 2¼ cups

Ingredients
  

  • 2 cups (280 grams) cherry tomatoes
  • 2 tablespoons (28 grams) extra-virgin olive oil
  • ¾ teaspoon (1 gram) dried oregano
  • ½ teaspoon crushed red pepper
  • Kosher salt and ground black pepper, to taste
  • 24 fresh mozzarella pearls (230 grams)

Instructions

  • Preheat oven to 300°F (150°C).
  • Place tomatoes in an even layer on a baking sheet. Drizzle with oil, and sprinkle with oregano, red pepper, salt, and black pepper.
  • Roast tomatoes until blistered and very soft, 40 to 45 minutes. Transfer to a medium bowl, and let cool completely.
  • Add mozzarella pearls to tomatoes, tossing to combine.
