Ganache

Makes about 1ΒΌ cups

Ingredients
  

  • 5 ounces (142 grams) semisweet chocolate, chopped
  • 1 tablespoon (14 grams) unsalted butter, softened
  • 1/4 teaspoon kosher salt
  • 1/2 cup plus 2 tablespoons (150 grams) heavy whipping cream, room temperature

Instructions

  • In a heatproof bowl, place chopped chocolate, butter, and salt.
  • In a small saucepan, heat cream over medium-low heat just until it begins to steam. (Do not boil.) Pour hot cream onto chocolate mixture. Let stand for 5 minutes; stir until smooth. Use immediately.
