Blueberry Filling

Makes about 1¾ cups

Ingredients
  

  • cups (320 grams) fresh blueberries
  • ¾ cup (150 grams) granulated sugar
  • 2 tablespoons (16 grams) cornstarch
  • 2 tablespoons (30 grams) fresh lemon juice
  • 1 teaspoon (4 grams) vanilla extract
  • ¼ teaspoon kosher salt

Instructions

  • In a medium saucepan, stir together all ingredients; cook over medium-high heat, stirring occasionally, until blueberries begin to break down and mixture begins to boil. Reduce heat to medium-low; cook, stirring occasionally, until thickened, about 5 minutes. Remove from heat, and let cool completely. Refrigerate in an airtight container for up to 1 week.
