Apple-Streusel Cookies

Ingredients
  

  • ½ cup (113 grams) unsalted butter, softened
  • 1 cup (200 grams) granulated sugar
  • ½ cup (110 grams) firmly packed light brown sugar
  • 2 large eggs (100 grams), room temperature
  • teaspoons (6 grams) vanilla extract
  • 3 cups (375 grams) all-purpose flour
  • 1 teaspoon (5 grams) baking soda
  • 1 teaspoon (3 grams) kosher salt
  • ½ teaspoon (1 gram) ground cinnamon
  • ¼ teaspoon ground nutmeg
  • ¼ teaspoon ground allspice
  • cups (140 grams) ¼-inch-diced Pink Lady apples
  • Oat Streusel (recipe follows)
  • Spiced Glaze (recipe follows)

Instructions

  • Preheat oven to 375°F (190°C). Line 4 baking sheets with parchment paper.
  • In the bowl of a stand mixer fitted with the paddle attachment, beat butter and sugars at medium speed until fluffy, 3 to 4 minutes, stopping to scrape sides of bowl. Add eggs, one at a time, beating well after each addition. Beat in vanilla.
  • In a medium bowl, whisk together flour, baking soda, salt, cinnamon, nutmeg, and allspice. With mixer on low speed, gradually add flour mixture to butter mixture, beating until just a few streaks of flour remain. Add apples, and beat just until combined. Using a 2-tablespoon spring-loaded scoop, scoop dough (about 36 grams each), and place 2 inches apart on prepared pans.
  • Bake, one batch at a time, until cookies start to melt, about 4 minutes. Sprinkle 2 teaspoons (about 7 grams) Oat Streusel on each parbaked cookie, and gently press into top. Bake until streusel and edges of cookies start to brown, 6 to 8 minutes more. Let cool completely on pans. Drizzle Spiced Glaze onto cooled cookies.
