In a medium saucepan, combine apples, sugar, orange zest and juice, and Quatre Épices Spice Mix. Bring to a boil over medium-high heat, stirring frequently. Cover and reduce heat to medium-low; cook, stirring frequently, until apples are softened, about 10 minutes. Remove from heat; using a potato masher or a fork, roughly mash apples until pieces are about ¼ inch. Stir in raisins and vanilla. Let cool completely before using.
