Chocolate Ganache

Makes about 1½ cups

Ingredients
  

  • 6 ounces (172 grams) dark chocolate, finely chopped
  • 2 ounces (57 grams) milk chocolate, finely chopped
  • ½ cup (120 grams) heavy whipping cream

Instructions

  • In a small heatproof bowl, place chocolates.
  • In a small saucepan, heat cream over medium heat until steaming. (Do not boil.) Pour warm cream onto chocolates, and let stand for 3 to 5 minutes. Whisk until melted and smooth. Use immediately.
