Lime Shortbread Bars
- 1 cup (227 grams) unsalted butter, softened
- ½ cup (100 grams) granulated sugar
- 2 cups (250 grams) all-purpose flour
- 1½ tablespoons (4.5 grams) grated lime zest
- 1 tablespoon (7 grams) confectioners’ sugar
- Preheat oven to 325°F (170°C).
- In the bowl of a stand mixer fitted with the paddle attachment, beat butter and granulated sugar at medium speed until creamy, 3 to 4 minutes, stopping to scrape sides of bowl. With mixer on low speed, gradually add flour and zest, beating until dough comes together. Press dough into an ungreased 9-inch square baking pan. Prick dough all over with a fork.
- Bake until lightly browned, 30 to 35 minutes. Cut into squares while still hot in pan. Let cool completely. Remove from pan; sprinkle with confectioners’ sugar.
PRO TIP
Pricking the tops of bars before baking allows moisture to escape and creates a crispy bar.
