Strawberry Jam Crumble Bars
 
Makes 16 bars
Ingredients
  • 1⅔ cups (208 grams) all-purpose flour
  • 1¼ cups (110 grams) old-fashioned oats
  • ¾ cup (173 grams) unsalted butter, melted
  • ¾ cup (166 grams) granulated sugar
  • ⅓ cup (75 grams) firmly packed dark brown sugar
  • 2 teaspoons (11 grams) kosher salt
  • 1¾ cups fresh strawberries, chopped
  • 1½ cups Quick Strawberry Jam
Instructions
  1. Preheat oven to 350°. Line an 8-inch square baking pan with parchment paper, letting excess extend over sides of pan; lightly spray parchment with baking spray with flour.
  2. In a medium bowl, whisk together flour, oats, melted butter, sugars, and salt until crumbly. Press half of mixture into bottom of prepared pan. Arrange strawberries on prepared crust; dollop Quick Strawberry Jam all over berries. Sprinkle remaining flour mixture onto jam.
  3. Bake until topping is golden brown and filling is bubbly, 55 minutes to 1 hour. Let cool completely in pan on a wire rack.
  4. Refrigerate until cooled and firm, about 1 hour. Using excess parchment as handles, remove from pan, and cut into 2-inch squares. Refrigerate in an airtight container for up to 3 days.
