Irish Whiskey Streusel
- 1¾ cups (219 grams) all-purpose flour
- 1 cup (220 grams) firmly packed light brown sugar
- 2 teaspoons (4 grams) espresso powder
- 1¼ teaspoons (2.5 grams) ground cinnamon
- ½ teaspoon (1.5 grams) kosher salt
- ½ cup plus 2 tablespoons (141 grams) cold unsalted butter, cubed
- 1 tablespoon (15 grams) Irish whiskey
- In the work bowl of a food processor, place flour, brown sugar, espresso powder, cinnamon, and salt; pulse until combined. Add cold butter and whiskey, and pulse until pea-sized clumps of streusel form, about 10 times. Refrigerate until ready to use.
